Limoncello Cake

This Limoncello Cake is a zesty, moist dessert infused with the bright flavors of Italian lemon liqueur, offering a perfect balance of tangy and sweet in every bite.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/2 cup limoncello liqueur
  • 2 tablespoons lemon zest
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix just until combined.
  6. Stir in limoncello, lemon zest, lemon juice, and vanilla extract until evenly incorporated.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely in the pan on a wire rack.
  10. Once cool, dust the top with powdered sugar and optionally drizzle additional limoncello before serving.

Notes

For an extra decadent touch, serve with whipped cream or a lemon glaze made from powdered sugar and lemon juice.
