Lemon and Sweet Raspberry Bars

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1 3/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine 1 1/2 cups flour and powdered sugar. Cut in the softened butter until mixture is crumbly.
  3. Press the crust mixture evenly into the prepared pan. Bake for 15-20 minutes, or until lightly golden. Remove from oven and let cool slightly.
  4. In a large bowl, whisk together eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  5. Pour the lemon mixture over the warm crust. Evenly distribute fresh raspberries on top.
  6. Bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly.
  7. Allow the bars to cool completely in the pan before refrigerating for at least 2 hours.
  8. Once chilled, lift bars out of the pan using the parchment overhang. Dust with powdered sugar if desired. Cut into squares and serve.

Notes

For an extra burst of flavor, garnish with fresh mint leaves or serve with a dollop of whipped cream.
