Korean Pot Roast

This Korean Pot Roast features tender, slow-cooked beef infused with a rich and savory blend of traditional Korean flavors, perfect for a comforting dinner.

  • 3 lbs beef chuck roast
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice wine
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 Asian pear, grated
  • 1 cup beef broth
  • 2 tbsp sesame oil
  • 1 tbsp gochujang (Korean chili paste)
  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, combine soy sauce, brown sugar, rice wine, garlic, ginger, grated pear, beef broth, sesame oil, and gochujang.
  3. Season the beef chuck roast with salt and pepper and place it in a large Dutch oven or oven-safe pot.
  4. Pour the marinade over the roast, ensuring it is well coated.
  5. Cover the pot with a lid and cook in the preheated oven for 3 to 3.5 hours, or until the beef is fork-tender.
  6. Remove the roast from the pot and slice against the grain.
  7. Serve topped with sliced green onions and toasted sesame seeds, spooning some of the cooking liquid over the meat.

Notes

For extra depth of flavor, marinate the beef overnight in the refrigerator before cooking.
