Kentucky Derby Cheese Straws

Kentucky Derby Cheese Straws are a classic Southern snack, featuring crispy, buttery pastry filled with sharp cheddar cheese and a hint of cayenne for a perfect party appetizer.

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 cup unsalted butter, cold and cubed
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons ice water

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine flour, salt, cayenne pepper, and paprika.
  3. Using a pastry cutter or fingers, cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Add ice water, one tablespoon at a time, mixing until the dough just comes together.
  6. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  7. Cut the dough into 4-inch strips and place them on the prepared baking sheets.
  8. Bake for 15-18 minutes or until the cheese straws are golden and crisp.
  9. Allow to cool on the baking sheet before serving.

Notes

For an extra kick, sprinkle a little extra cayenne or smoked paprika on top of the cheese straws before baking.
