Huli Huli Chicken

Huli Huli Chicken

Huli Huli Chicken is a flavorful Hawaiian grilled chicken dish marinated in a sweet and savory sauce, perfect for summer cookouts or a tropical dinner.

Ingredients

Scale
  • 4 lbs chicken thighs, bone-in and skin-on
  • 1 cup soy sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons grated fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. In a large bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, ginger, garlic, smoked paprika, black pepper, and vegetable oil.
  2. Place chicken thighs in a large resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring all pieces are well coated. Marinate in the refrigerator for at least 4 hours, preferably overnight.
  3. Preheat grill to medium-high heat. Oil the grill grates to prevent sticking.
  4. Remove chicken from marinade, reserving the marinade for basting.
  5. Grill chicken thighs skin-side down for about 6-8 minutes per side, basting occasionally with reserved marinade, until chicken is cooked through and has a nice char (internal temperature should reach 165°F).
  6. Remove from grill and let rest for 5 minutes before serving.
  7. Garnish with chopped green onions and sesame seeds if desired, and serve with rice or grilled vegetables.

Notes

For extra flavor, baste the chicken frequently during grilling and consider serving with a side of grilled pineapple for a tropical twist.
