Honey BBQ Chicken Rice

Honey BBQ Chicken Rice is a flavorful and easy-to-make dish combining tender chicken glazed with sweet honey BBQ sauce served over fluffy steamed rice, perfect for a quick weeknight dinner.

  • 2 cups cooked white rice
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon soy sauce (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 3 minutes.
  2. Add garlic and cook for an additional 30 seconds until fragrant.
  3. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned and cooked through, about 7-8 minutes.
  4. In a small bowl, mix honey and BBQ sauce (and soy sauce if using).
  5. Pour the honey BBQ sauce over the chicken, stirring to coat evenly. Cook for 2-3 minutes until sauce is heated and slightly thickened.
  6. Serve the honey BBQ chicken over cooked white rice.
  7. Garnish with sliced green onions and enjoy.

For extra flavor, try grilling the chicken pieces before tossing them in the sauce or serve with steamed vegetables on the side.
