Dandelion Jelly

Dandelion Jelly is a delightful homemade spread made from fresh dandelion petals, offering a natural floral sweetness perfect for toast or desserts.

  • 4 cups fresh dandelion petals (yellow only, no green parts)
  • 4 cups water
  • 1 package fruit pectin (1.75 oz)
  • 5 cups granulated sugar
  • 2 tablespoons lemon juice

Instructions

  1. Rinse dandelion petals thoroughly to remove dirt and insects.
  2. In a large pot, combine petals and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Strain the mixture through a fine mesh, pressing petals to extract as much liquid as possible. Discard petals.
  4. Measure out 4 cups of dandelion liquid and return to pot.
  5. Stir in lemon juice and pectin. Bring mixture to a full rolling boil over high heat, stirring constantly.
  6. Add sugar all at once, return to a full boil and boil hard for 1 minute, stirring constantly.
  7. Remove from heat and skim off foam if needed.
  8. Pour jelly into sterilized jars, leaving 1/4 inch headspace. Seal and process jars in boiling water bath for 10 minutes.
  9. Let jars cool, check seals, and store in a cool, dark place.

Notes

For a twist, add a cinnamon stick while simmering petals and remove before adding pectin for a warm spice note.
