Hawaiian Teriyaki Chicken Thighs

  • 6 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon vegetable oil
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. In a bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, garlic, ginger, and rice vinegar to create the teriyaki marinade.
  2. Place chicken thighs in a resealable bag or shallow dish and pour marinade over them. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
  3. Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade, reserving the marinade, and cook chicken thighs for 5-7 minutes per side until golden and cooked through.
  4. In a small bowl, mix cornstarch with water to create a slurry. Pour the reserved marinade into the skillet and bring to a simmer.
  5. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.
  6. Return the chicken thighs to the skillet, coating them in the thickened sauce. Cook for an additional 1-2 minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.
