Hawaiian BBQ Chicken

Experience a tropical twist with this Hawaiian BBQ Chicken, combining sweet pineapple flavors and tangy barbecue sauce for a deliciously juicy meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup BBQ sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 cup pineapple chunks
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. In a bowl, combine pineapple juice, BBQ sauce, soy sauce, brown sugar, garlic, and ginger; whisk well to make the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat and oil the grates to prevent sticking.
  4. Remove chicken from marinade and season with salt and pepper. Reserve the marinade.
  5. Grill chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (74°C).
  6. During the last 5 minutes of grilling, add pineapple chunks to the grill and cook until caramelized.
  7. While grilling, bring the reserved marinade to a boil in a small saucepan and simmer for 5 minutes to use as a glaze.
  8. Brush the cooked chicken with the reduced marinade glaze, then remove from grill.
  9. Serve chicken topped with grilled pineapple chunks and garnish with chopped green onions and sesame seeds.

Notes

For extra flavor, serve with coconut rice or a fresh mango salsa to enhance the tropical theme.
