This Ground Beef Taco Skillet is a quick and flavorful one-pan meal packed with seasoned beef, vegetables, and melted cheese—perfect for an easy weeknight dinner.

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 2 cups cooked rice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • Jalapeño slices for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add ground beef to the skillet, season with salt and pepper, and cook until browned, breaking it apart with a spatula.
  4. Drain excess fat if necessary, then stir in taco seasoning and water. Simmer for 5 minutes until sauce thickens.
  5. Stir in diced tomatoes, black beans, corn, and cooked rice. Mix well and cook for another 3-4 minutes until heated through.
  6. Sprinkle shredded cheddar cheese over the skillet, cover, and cook until cheese melts, about 2 minutes.
  7. Garnish with fresh cilantro and jalapeño slices if desired, and serve hot.

Notes

For extra flavor, serve with a dollop of sour cream or sliced avocado on top.
