GRILLED VEGETABLE SKEWERS

Deliciously charred and colorful, these grilled vegetable skewers are a healthy and flavorful option perfect for summer barbecues or a light meal.

Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into chunks
  • 8 cherry tomatoes
  • 8 button mushrooms
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using to prevent burning.
  2. Preheat the grill to medium-high heat.
  3. In a bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper.
  4. Toss the prepared vegetables in the seasoned olive oil mixture until evenly coated.
  5. Thread the vegetables alternately onto the skewers: bell peppers, zucchini, onion, cherry tomatoes, and mushrooms.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until vegetables are tender and slightly charred.
  7. Remove from grill and serve warm.

Notes

For extra flavor, brush the skewers with balsamic glaze before serving or sprinkle with fresh herbs like parsley or basil.
