This grilled romaine salad features smoky, charred lettuce paired with a tangy dressing and crunchy toppings, making for a fresh and flavorful side or light meal.

  • 2 heads romaine lettuce, halved lengthwise
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush romaine halves with olive oil and season with salt and pepper.
  3. Place romaine cut side down on the grill and cook for 2-3 minutes until slightly charred.
  4. In a small bowl, whisk together lemon juice, minced garlic, mayonnaise, Dijon mustard, and remaining olive oil to make the dressing.
  5. Remove romaine from grill and place on a serving platter.
  6. Drizzle the dressing over the grilled romaine.
  7. Sprinkle grated Parmesan cheese and toasted pine nuts on top.
  8. Serve immediately as a fresh, smoky salad.

Notes

For added protein, top the salad with grilled chicken or shrimp. You can also swap pine nuts for toasted walnuts or almonds.
