Grilled Garlic Herb Shrimp Skewers

  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, combine olive oil, minced garlic, parsley, basil, thyme, salt, pepper, and lemon juice.
  3. Add the shrimp to the marinade and toss to coat evenly. Let marinate for 15-20 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the shrimp onto the skewers, about 4-5 per skewer.
  6. Place the skewers on the grill and cook for 2-3 minutes per side, until shrimp are opaque and cooked through.
  7. Remove from grill and serve immediately with lemon wedges if desired.

Notes

For extra flavor, serve with a side of garlic butter or toss the grilled shrimp in a squeeze of fresh lemon juice just before serving.
