Grilled Corn Salsa

This vibrant Grilled Corn Salsa combines smoky, sweet corn with fresh vegetables and zesty lime for a refreshing and flavorful dip or topping.

Ingredients

  • 4 ears of fresh corn, husked
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush the ears of corn with olive oil and grill for about 10-12 minutes, turning occasionally until charred and tender.
  3. Remove corn from grill and allow to cool slightly.
  4. Using a sharp knife, cut the kernels off the cobs into a large bowl.
  5. Add the diced red bell pepper, chopped onion, minced jalapeño, and cilantro to the bowl.
  6. Pour lime juice over the mixture and season with salt and black pepper.
  7. Mix all ingredients gently to combine.
  8. Refrigerate salsa for at least 30 minutes to let flavors meld before serving.

Notes

For extra heat, keep the jalapeño seeds or add a pinch of cayenne pepper. This salsa pairs perfectly with grilled meats, tacos, or as a dip with tortilla chips.
