  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sliced avocado
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onions
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • Lettuce leaves (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Brush the chicken breasts with the seasoned olive oil mixture on both sides.
  4. Place the chicken on the hot grill and cook for 6-7 minutes per side or until internal temperature reaches 165°F (74°C).
  5. Remove chicken from grill and let rest for 5 minutes.
  6. Arrange the chicken breasts on a serving platter and set out all toppings in separate bowls.
  7. Allow guests to top their chicken with desired toppings to customize their plates.

Notes

For added flavor, marinate the chicken in the seasoning mixture for 30 minutes before grilling, and serve with warm tortillas for a chicken taco bar variation.
