Grilled Chicken Kabobs

Juicy and flavorful grilled chicken kabobs marinated with herbs and spices, perfect for a healthy and satisfying dinner.

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 bell peppers (red and green), cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and pepper.
  2. Add the chicken cubes to the marinade, toss to coat evenly, and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Preheat grill to medium-high heat.
  5. Thread the chicken, bell peppers, and onion alternately onto the skewers.
  6. Place kabobs on the grill and cook for 10-12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

For added flavor, serve with a side of tzatziki sauce or a sprinkle of fresh chopped parsley.
