Greek Cucumber Salad

A refreshing Greek Cucumber Salad combining crisp cucumbers, juicy tomatoes, tangy feta, and zesty herbs, drizzled with a simple lemon-oregano dressing.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, cherry tomatoes, red onion, and Kalamata olives.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetables and toss gently to coat evenly.
  4. Sprinkle the crumbled feta cheese, chopped dill, and parsley over the salad.
  5. Give the salad a light toss before serving to distribute the herbs and cheese.
  6. Serve chilled or at room temperature for best flavor.

Notes

For added crunch, sprinkle some toasted pine nuts on top before serving, or serve alongside grilled meats for a complete Mediterranean meal.
