  • 1 ½ cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • Colored sprinkles or edible graduation decorations (optional)

Instructions

  1. Preheat oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.
  2. Combine graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl. Press about 1 tablespoon of the mixture into the bottom of each muffin cup to form the crust.
  3. Bake the crusts for 5 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese until smooth and creamy.
  5. Add ½ cup sugar, eggs, and vanilla extract; beat until well combined and smooth.
  6. Fold in sour cream gently until incorporated.
  7. Pour the cream cheese mixture evenly over the baked crusts in the muffin tin.
  8. Bake for 18-22 minutes until the edges are set but the centers still jiggle slightly.
  9. Remove from oven and allow cheesecakes to cool completely before refrigerating for at least 2 hours.
  10. Decorate with colored sprinkles or edible graduation decorations before serving.
