  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 tablespoons milk
  • Royal icing (for decorating)
  • Food coloring (black, blue, yellow).
  • Edible glitter or sprinkles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the butter and sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until combined.
  5. Gradually blend in the dry ingredients alternately with milk, mixing just until incorporated.
  6. Roll out the dough on a floured surface to about ¼ inch thickness.
  7. Use graduation-themed cookie cutters (caps, diplomas) to cut shapes and place them 1 inch apart on baking sheets.
  8. Bake for 8 to 10 minutes or until the edges are golden.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
  10. Decorate cooled cookies with royal icing and food coloring to create graduation caps, tassels, and diploma details. Let icing dry completely before serving.
