Gnocchi with Spinach and Feta

Delight in this comforting Gnocchi with Spinach and Feta, a simple Italian-inspired dish combining pillowy gnocchi with vibrant spinach and tangy feta cheese. Perfect for a quick, flavorful weeknight dinner.

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 5 oz fresh spinach
  • 4 oz feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if using.
  4. Toss the cooked gnocchi into the skillet with the spinach. Stir gently to combine and warm through for 1-2 minutes.
  5. Remove from heat and sprinkle crumbled feta and grated Parmesan over the gnocchi. Toss lightly to combine.
  6. Serve immediately, garnished with extra Parmesan or a drizzle of olive oil if desired.

Notes

For added protein, top the dish with grilled chicken or toasted pine nuts. A squeeze of fresh lemon juice brightens the flavors beautifully.
