German Potato Salad

A warm and tangy German Potato Salad featuring tender potatoes tossed in a savory bacon and vinegar dressing, perfect as a hearty side dish.

  • 2 pounds small red or Yukon gold potatoes
  • 6 slices bacon
  • 1 medium onion, finely chopped
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 3 tablespoons granulated sugar
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly, then slice into 1/2-inch pieces.
  2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon and drain on paper towels, reserving bacon drippings in the skillet.
  3. Add chopped onion to the bacon drippings and sauté over medium heat until translucent, about 3-4 minutes.
  4. Stir in vinegar, water, sugar, and Dijon mustard. Bring to a simmer and cook for 2-3 minutes, stirring occasionally.
  5. Add sliced potatoes to the skillet and gently toss to coat with the dressing. Cook for another 2 minutes to allow flavors to meld.
  6. Chop the cooked bacon and sprinkle over the potato salad. Season with salt and pepper to taste.
  7. Garnish with fresh parsley if desired and serve warm or at room temperature.

Notes

For a creamier variation, add a dollop of sour cream just before serving or serve the salad warm alongside sausage or grilled meats.
