Fresh Fruit Tart

A delightful and colorful Fresh Fruit Tart featuring a buttery crust, creamy custard filling, and a vibrant assortment of seasonal fruits, perfect for a light and refreshing dessert.

  • 1 pre-made tart shell (9-inch)
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 1/2 cup granulated sugar, divided
  • 4 large egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • Assorted fresh fruits (strawberries, kiwi, blueberries, raspberries, etc.)
  • 1/4 cup apricot jam (optional, for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Bake the tart shell according to package instructions until golden and fully cooked; let cool completely.
  2. In a medium saucepan, combine milk, heavy cream, and half of the sugar. Heat over medium heat until just simmering.
  3. In a bowl, whisk the egg yolks, remaining sugar, and cornstarch until pale and smooth.
  4. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat, whisking continuously until it thickens to a custard consistency.
  6. Remove from heat and stir in vanilla extract. Let custard cool slightly.
  7. In a separate bowl, beat softened cream cheese until smooth, then gradually mix in the custard until well combined and smooth.
  8. Pour the custard filling into the cooled tart shell and smooth the top.
  9. Arrange fresh fruit beautifully on top of the custard.
  10. If desired, warm apricot jam and brush lightly over the fruits to create a shiny glaze.
  11. Refrigerate the tart for at least 2 hours before serving to set.

Notes

For a vegan version, substitute the custard with coconut cream pudding and use a dairy-free tart shell; also, fresh mint leaves add a nice aromatic touch when garnishing.
