Fresh Corn Salsa

Fresh Corn Salsa is a vibrant and zesty mix of sweet corn, juicy tomatoes, and crisp peppers, perfect for a refreshing appetizer or side dish.

Ingredients

  • 2 cups fresh corn kernels (about 3 ears)
  • 1 cup diced tomatoes
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Cut the kernels off the corn cobs and place them in a large bowl.
  2. Add the diced tomatoes, red onion, jalapeño, and cilantro to the bowl.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. Pour the dressing over the corn mixture and toss gently to combine.
  5. Let the salsa sit for 10 minutes to allow flavors to meld.
  6. Serve chilled or at room temperature with tortilla chips or as a topping for tacos.

For an extra smoky flavor, try grilling the corn before cutting the kernels off the cob.
