Foraged Dandelion Honey

  • 4 cups fresh dandelion flowers (yellow petals only)
  • 4 cups water
  • 4 cups granulated sugar
  • 1 lemon (juiced)

Instructions

  1. Thoroughly rinse the dandelion flowers to remove any dirt or insects.
  2. In a large pot, bring the water to a boil, then remove from heat and add the dandelion flowers.
  3. Cover and let the mixture steep for 24 hours at room temperature.
  4. Strain the liquid through a fine mesh sieve or cheesecloth, discarding the flowers.
  5. Return the strained liquid to the pot, add the sugar and lemon juice, and stir well.
  6. Simmer the mixture over medium heat, stirring occasionally, until it thickens to a honey-like consistency (about 1 to 1.5 hours).
  7. Allow to cool, then transfer to sterilized jars and store in the refrigerator.

Notes

For a richer flavor, try infusing the honey with a cinnamon stick during simmering or serve drizzled over warm toast or yogurt.
