This moist and tangy Flourless Yogurt Cake is a naturally gluten-free dessert that combines creamy yogurt with zesty lemon for a simple yet elegant treat.

  • 1 cup Greek yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup almond meal
  • 1 teaspoon baking powder (gluten-free)
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/4 cup vegetable oil
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar until pale and thick.
  3. Add the Greek yogurt, vegetable oil, lemon zest, and lemon juice, mixing until smooth.
  4. In a separate bowl, combine the almond meal, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet ingredients until fully incorporated.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For an extra touch, dust the cake with powdered sugar or serve with fresh berries and a dollop of whipped cream.
