  • 8 boneless, skinless chicken breasts
  • 2 zucchinis, sliced
  • 2 red bell peppers, quartered
  • 1 pint cherry tomatoes
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 4 cups cooked quinoa or rice (optional)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  3. Brush chicken breasts and vegetables with the olive oil mixture.
  4. Grill chicken for 6-8 minutes per side until cooked through and juices run clear.
  5. Grill vegetables for 4-5 minutes until tender and slightly charred.
  6. Remove chicken and vegetables from grill and arrange on a large platter.
  7. Sprinkle chopped parsley over the top and serve with quinoa or rice if desired.

Notes

For extra flavor, marinate the chicken in the olive oil mixture for 2 hours before grilling. Serve with a crisp green salad and crusty bread.
