Zucchini boats are a delicious and healthy stuffed zucchini recipe, perfect for a light dinner or side dish with a flavorful blend of vegetables and cheese.

  • 4 medium zucchinis
  • 1 cup cherry tomatoes, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup cooked quinoa or rice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash the zucchinis and cut them in half lengthwise. Scoop out the centers with a spoon, creating boats.
  3. Chop the scooped-out zucchini flesh and set aside.
  4. Heat olive oil in a skillet over medium heat. Add garlic, red onion, bell peppers, and the chopped zucchini flesh. Sauté for 5 minutes until softened.
  5. Add cherry tomatoes, cooked quinoa (or rice), oregano, salt, and pepper. Stir and cook for another 3 minutes.
  6. Fill each zucchini boat with the vegetable and quinoa mixture.
  7. Sprinkle mozzarella and Parmesan cheese evenly over the filled zucchini.
  8. Place zucchini boats on a baking dish and bake for 20-25 minutes until zucchinis are tender and cheese is golden.
  9. Remove from oven and let cool slightly before serving.

Notes

For added protein, try mixing in cooked ground turkey or chickpeas into the filling before stuffing the zucchini.
