A frittata is a versatile Italian egg-based dish similar to an omelette or crustless quiche, perfect for any meal of the day. It combines eggs with fresh vegetables, cheese, and herbs for a hearty and flavorful dish.

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup diced onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper until smooth.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté onion and bell peppers until softened, about 3-4 minutes.
  5. Add the chopped spinach and cook until wilted.
  6. Pour the egg mixture evenly over the vegetables in the skillet.
  7. Sprinkle mozzarella cheese and basil on top.
  8. Cook on the stovetop over medium heat for 3-4 minutes until the edges start to set.
  9. Transfer the skillet to the oven and bake for 10-12 minutes until the frittata is fully set and lightly golden.
  10. Remove from oven, let cool for a few minutes, then slice and serve.

Notes

For extra flavor, try adding cooked sausage or mushrooms, and serve the frittata with a side salad or crusty bread.
