Easy Apricot Glazed Carrots

Sweet and tender carrots glazed with a luscious apricot sauce make a quick and flavorful side dish perfect for any meal.

  • 1 lb carrots, peeled and sliced
  • 2 tbsp apricot preserves
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Bring a pot of water to a boil and add the sliced carrots. Cook for 5-7 minutes until tender but still firm; drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the apricot preserves and lemon juice to the skillet, stirring until the preserves melt and form a glaze.
  4. Add the cooked carrots to the skillet and toss to coat evenly with the apricot glaze.
  5. Season with salt and pepper, cooking for an additional 2-3 minutes while stirring gently.
  6. Remove from heat and garnish with chopped parsley if desired. Serve warm.

Notes

For added texture, sprinkle toasted sliced almonds over the glazed carrots before serving.
