Instructions

  1. In a medium bowl, mix the peanut butter, softened butter, honey (or maple syrup), and vanilla extract until smooth.
  2. Gradually add the powdered sugar, stirring until a firm dough forms.
  3. Roll the mixture into egg-shaped pieces and place them on a parchment-lined baking sheet.
  4. Freeze the peanut butter eggs for about 20 minutes to firm up.
  5. In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  6. Using a fork or dipping tool, coat each peanut butter egg in the melted chocolate and place back onto the parchment paper.
