Dill Pickle Potato Salad

A tangy and creamy Dill Pickle Potato Salad that combines tender potatoes with crunchy dill pickles for a refreshing twist on a classic side dish.

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 3/4 cup dill pickles, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons dill pickle juice
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Cook the potatoes until fork-tender, about 10-12 minutes. Drain and let them cool completely.
  3. In a large bowl, combine mayonnaise, dill pickle juice, Dijon mustard, salt, and black pepper.
  4. Add the cooled potatoes, chopped dill pickles, red onion, celery, hard-boiled eggs, and fresh dill to the bowl. Gently toss to combine.
  5. Adjust seasoning with additional salt, pepper, or pickle juice as desired.
  6. Chill the potato salad in the refrigerator for at least 1 hour before serving to allow flavors to meld.

Notes

For extra crunch, garnish the salad with sliced radishes or add crispy bacon bits before serving.
