Tomato pie is a savory Southern classic featuring a flaky crust layered with ripe tomatoes, tangy cheese, and fresh herbs, baked to golden perfection.

  • 1 unbaked 9-inch pie crust
  • 3 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 1/2 cup chopped green onions
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the pie crust in a 9-inch pie plate and crimp the edges.
  3. Lay the tomato slices on a paper towel, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Pat dry.
  4. Arrange a layer of tomatoes evenly over the crust.
  5. Sprinkle half of the green onions, cheddar cheese, basil, and oregano over the tomatoes.
  6. In a bowl, mix mayonnaise, Parmesan cheese, and black pepper.
  7. Spread half of the mayonnaise mixture over the cheese layer.
  8. Add another layer of tomatoes and repeat layering with remaining onions, cheese, basil, oregano, and mayonnaise mixture.
  9. Bake for 35 to 40 minutes until the top is golden and bubbly.
  10. Let cool for 10 minutes before serving.

Notes

For a spicier twist, add a dash of cayenne pepper to the mayonnaise mixture or garnish with fresh arugula before serving.
