Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

  1. In a bowl, combine the white vinegar, sugar, salt, and black pepper. Stir until sugar and salt are dissolved.
  2. Add the sliced cucumbers and onions to the vinegar mixture and toss to coat evenly.
  3. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Before serving, toss the salad again and sprinkle with fresh dill if desired.

Notes

For a crunchier texture, use Kirby cucumbers and serve chilled. This salad pairs well with grilled meats or sandwiches.
