Crock Pot Street Tacos

  • 2 lbs beef chuck roast
  • 1 small white onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges
  • Diced onions (optional, for topping)
  • Salsa or hot sauce (optional)

Instructions

  1. Place the beef chuck roast in the crock pot and season with salt, pepper, chili powder, cumin, smoked paprika, and oregano.
  2. Add sliced onions and minced garlic on top of the beef.
  3. Pour beef broth over the ingredients.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shredded.
  5. Remove the beef from the crock pot and shred using two forks.
  6. Return shredded beef to the crock pot and stir to combine with the cooking juices.
  7. Warm the corn tortillas in a dry skillet or microwave.
  8. Assemble tacos by placing shredded beef in tortillas, then garnish with chopped cilantro, diced onions, and a squeeze of lime juice.
  9. Serve with salsa or hot sauce on the side if desired.

Notes

For extra depth of flavor, marinate the beef in the spices overnight before cooking, or add pickled jalapeños as a spicy topping.
