Crock Pot Corned Beef

Tender, flavorful corned beef slow-cooked to perfection in a crock pot, making mealtime effortless and delicious. This classic comfort dish is ideal for family dinners or St. Patrick’s Day celebrations.

  • 4 lbs corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 large onion, quartered
  • 4 garlic cloves, peeled
  • 4 large carrots, peeled and cut into chunks
  • 3 medium potatoes, quartered
  • 1 small head of cabbage, cut into wedges
  • 2 tbsp mustard seeds (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the corned beef under cold water and pat dry.
  2. Place the corned beef in the crock pot, fat side up.
  3. Sprinkle the included spice packet over the meat along with mustard seeds if using.
  4. Add onion quarters and garlic cloves around the meat.
  5. Pour beef broth into the crock pot until it reaches halfway up the sides of the brisket.
  6. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours, until meat is tender.
  7. About 1 hour before the end of cooking, add carrots and potatoes around the beef.
  8. 30 minutes before serving, add cabbage wedges on top.
  9. Remove corned beef and let it rest for 10 minutes before slicing against the grain.
  10. Serve with cooked vegetables and garnish with fresh parsley if desired.

Notes

For extra flavor, remove the spice packet and add a few bay leaves and peppercorns instead. Leftover corned beef makes great sandwiches or hash.
