Crispy Baja Fish Tacos

Deliciously crispy Baja fish tacos featuring golden fried fish, fresh cabbage slaw, and a zesty creamy sauce wrapped in warm corn tortillas—perfect for a vibrant Mexican-inspired meal.

  • 1 lb white fish fillets (cod or halibut), cut into strips
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cold beer
  • Vegetable oil, for frying
  • 8 small corn tortillas
  • 2 cups shredded green cabbage
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp lime juice
  • 1 tsp hot sauce (optional)
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, whisk together flour, baking powder, paprika, salt, and black pepper.
  2. Slowly add cold beer to the flour mixture, whisking until a smooth batter forms. Refrigerate for 10 minutes.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Dip fish strips into the batter, allowing excess to drip off, then carefully place them in hot oil.
  5. Fry the fish in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  6. In a small bowl, mix mayonnaise, sour cream, lime juice, and hot sauce to make the creamy sauce.
  7. Warm the corn tortillas in a dry skillet or microwave.
  8. Assemble tacos by placing fried fish on tortillas, topped with shredded cabbage, cilantro, and a drizzle of the creamy sauce.
  9. Serve immediately with lime wedges on the side.

Notes

For extra flavor, marinate the fish briefly in lime juice and garlic before battering, or add sliced avocado and pickled jalapeños to your tacos.
