  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup granulated sugar for caramelizing

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and 1 cup granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In a separate bowl, whisk together flour, salt, and baking powder.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll dough into 1-inch balls and place on the prepared baking sheets about 2 inches apart.
  7. Bake for 10-12 minutes, or until edges are lightly golden.
  8. Remove from oven and immediately sprinkle a teaspoon of granulated sugar on each cookie.
  9. Using a kitchen torch, carefully caramelize the sugar until golden and crisp.
  10. Let cookies cool completely on a wire rack before serving.

Notes
