This hearty and flavorful Cowboy Butter Lemon Bowtie Chicken with Broccoli combines tender chicken, tangy lemon butter sauce, and nutritious broccoli, all served over bowtie pasta for a comforting, well-rounded meal.

Ingredients

Scale
  • 8 oz bowtie (farfalle) pasta
  • 2 boneless, skinless chicken breasts
  • 1 head broccoli, cut into florets
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the bowtie pasta according to package instructions until al dente. Drain and set aside.
  2. Steam or blanch the broccoli florets for 3-4 minutes until tender-crisp. Drain and set aside.
  3. In a small bowl, mix smoked paprika, ground cumin, chili powder, salt, and pepper. Season both sides of the chicken breasts with this spice blend.
  4. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and let rest.
  5. Reduce heat to medium; add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
  6. Stir in lemon zest, lemon juice, and crushed red pepper flakes (if using). Let sauce simmer for 2 minutes.
  7. Slice chicken into strips and return to skillet. Add cooked pasta and broccoli, tossing gently to coat everything with the lemon butter sauce.
  8. Cook together for another 1-2 minutes until heated through. Sprinkle chopped parsley on top before serving.

Notes

For extra richness, add a sprinkle of grated Parmesan cheese or serve with crusty bread to soak up the buttery lemon sauce.
