Cottage Cheese Cloud Bread

Light, fluffy, and protein-packed, Cottage Cheese Cloud Bread is a perfect low-carb alternative to traditional bread, ideal for sandwiches or a quick snack.

  • 4 large eggs, separated
  • 1/2 cup cottage cheese (whole milk preferred)
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Optional: 1 tablespoon cream cheese or grated Parmesan for extra richness

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites with cream of tartar and salt until stiff peaks form.
  3. In a separate bowl, blend the egg yolks and cottage cheese (and cream cheese or Parmesan if using) until smooth.
  4. Gently fold the egg whites into the yolk mixture in three parts, being careful to maintain the airy texture.
  5. Spoon the batter onto the prepared baking sheet in 6 equal rounds, shaping them slightly.
  6. Bake for 25-30 minutes or until the cloud breads are golden and slightly firm to the touch.
  7. Allow to cool completely on a wire rack before serving or storing.

Notes

For savory variations, add herbs like chives or rosemary to the batter. Cloud bread is best eaten fresh but can be stored in an airtight container for up to 2 days.
