Cold Sesame Noodles

Cold Sesame Noodles are a refreshing and flavorful Asian-inspired dish featuring tender noodles tossed in a creamy, nutty sesame sauce, perfect for a quick lunch or light dinner.

  • 8 oz. spaghetti or Chinese egg noodles
  • 3 tbsp tahini or smooth peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp toasted sesame seeds
  • 2 green onions, thinly sliced
  • Optional: 1 tsp chili oil or sriracha for heat

Instructions

  1. Cook noodles according to package instructions until al dente. Drain and rinse under cold water to cool. Drain well.
  2. In a bowl, whisk together tahini (or peanut butter), soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until smooth and creamy.
  3. Toss the cooled noodles with the sesame sauce until evenly coated.
  4. Garnish with toasted sesame seeds, sliced green onions, and chili oil or sriracha if desired.
  5. Serve chilled or at room temperature as a light main dish or side.

Notes

For an extra protein boost, add shredded cooked chicken, tofu, or edamame. Toast the sesame seeds before using to enhance their nutty flavor.
