Cinco de Mayo Fruit Paletas

Celebrate Cinco de Mayo with these refreshing and vibrant fruit paletas, blending natural fruit flavors into a cool, easy-to-make Mexican-inspired treat.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh mango chunks
  • 1 cup fresh pineapple chunks
  • 1/2 cup fresh lime juice
  • 1/4 cup agave syrup or honey
  • 1 cup coconut water
  • 1/2 teaspoon chili powder (optional)
  • Wooden popsicle sticks

Instructions

  1. In a blender, combine strawberries, mango, pineapple, lime juice, agave syrup, and coconut water. Blend until smooth but slightly chunky.
  2. If desired, sprinkle a pinch of chili powder into each paleta mold for a mild spicy kick.
  3. Pour the fruit mixture evenly into popsicle molds, leaving a little space at the top for expansion.
  4. Insert wooden popsicle sticks and freeze for at least 6 hours or overnight until completely frozen.
  5. To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the paletas.
  6. Serve immediately and enjoy your vibrant Cinco de Mayo treat!

Notes

For an extra burst of flavor, sprinkle a little Tajín seasoning on the paletas before serving or blend in fresh mint for a refreshing twist.
