Cinco de Mayo Citrus Cupcakes

  • ⅓ cup unsalted butter, softened
  • 2 large eggs

  • ¼ cup freshly squeezed orange juice
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp orange zest
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tbsp orange juice
  • 1 tbsp lime juice
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional garnishes: thin lime and orange slices or edible flowers

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in the sour cream, orange juice, lime juice, orange zest, lime zest, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cupcakes cool completely on a wire rack before frosting.
  10. To make the frosting, beat softened butter until creamy. Gradually add powdered sugar, orange juice, lime juice, vanilla extract, and salt, beating until smooth and fluffy.
  11. Frost the cooled cupcakes and garnish with thin slices of lime and orange or edible flowers as desired.

Notes

For an extra festive touch, sprinkle some colorful sugar or edible glitter on top of the frosting just before serving.
