Chilled Strawberry Soup

This refreshing chilled strawberry soup blends ripe strawberries with a hint of citrus and mint for a naturally sweet and light appetizer or dessert.

Ingredients

  • 4 cups fresh strawberries, hulled and halved
  • 1/4 cup sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon orange zest
  • 1/2 cup plain yogurt or cream (optional)
  • 2 tablespoons fresh mint leaves, chopped
  • 1/2 cup cold water

Instructions

  1. In a blender, combine strawberries, sugar, lemon juice, orange zest, and cold water.
  2. Blend until smooth and well combined.
  3. Strain the mixture through a fine mesh sieve to remove seeds, if desired, for a smoother texture.
  4. Stir in the yogurt or cream if using, then mix in chopped mint leaves.
  5. Refrigerate the soup for at least 2 hours until well chilled.
  6. Serve cold, garnished with extra mint or sliced strawberries.

Notes

For a vegan version, substitute yogurt or cream with coconut milk or almond milk. Garnish with fresh basil for an intriguing twist.
