  • 1 pound boneless, skinless chicken breasts, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup Alfredo sauce
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  2. Add the diced onion and garlic to the pot. Sauté until onions are translucent and fragrant, about 2-3 minutes.
  3. Pour in the chicken broth, heavy cream, and Alfredo sauce. Stir to combine.
  4. Add the dried Italian seasoning, salt, and black pepper. Bring the mixture to a gentle boil.
  5. Once boiling, add the broken lasagna noodles. Reduce heat to medium-low and simmer until noodles are tender, about 10-12 minutes.
  6. Stir in the ricotta cheese, mozzarella, and Parmesan until melted and well combined.
  7. Adjust seasoning if needed. Serve hot, garnished with fresh basil or parsley.
