Cherry Honey Mustard Chicken

This Cherry Honey Mustard Chicken features tender chicken breasts glazed in a sweet and tangy cherry-infused honey mustard sauce, perfect for a flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cherries, pitted
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • Salt and pepper, to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Add cherries, honey, Dijon mustard, whole grain mustard, and chicken broth. Stir and cook for 5-7 minutes until the cherries break down and the sauce thickens slightly.
  5. Return the chicken to the skillet, spooning sauce over the top. Simmer for another 2-3 minutes to combine flavors.
  6. Garnish with fresh thyme or parsley before serving. Serve hot with your choice of sides.

Notes

For an extra burst of flavor, try adding a splash of balsamic vinegar to the sauce or serve with roasted vegetables and rice.
