Cherry Balsamic Chicken

Cherry Balsamic Chicken is a flavorful and easy-to-make dish featuring tender chicken breasts glazed with a tangy cherry and balsamic reduction, perfect for a delicious weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cherries, pitted
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and dried thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Add cherries, balsamic vinegar, and honey. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and cherries soften.
  5. Return the chicken to the skillet, spoon the cherry balsamic sauce over the top, and cook for another 2 minutes to combine flavors.
  6. Garnish with chopped fresh parsley and serve warm.

Notes

For a richer sauce, add a splash of chicken broth while simmering, or serve the chicken over creamy mashed potatoes or rice to soak up the delicious glaze.
