Instructions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, beat the egg with the buttermilk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently mix until just combined; do not overmix—some lumps are fine.
Heat a non-stick skillet or griddle over medium heat and lightly grease it.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancake and cook for an additional 1-2 minutes until golden brown and cooked through.

Notes
For extra fluffy pancakes, let the batter rest for 5 minutes before cooking. You can also add blueberries or chocolate chips to the batter for variation.
