Brown Sugar Garlic Chicken Thighs

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, minced garlic, soy sauce, apple cider vinegar, salt, pepper, and smoked paprika to create the marinade.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Season chicken thighs lightly with salt and pepper, then place skin-side down in the skillet and sear until golden brown, about 4-5 minutes.
  5. Flip chicken thighs and pour the brown sugar garlic marinade over them.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
  7. Baste chicken with the sauce once or twice during baking for extra flavor.
  8. Remove from oven, let rest for 5 minutes, then garnish with chopped parsley before serving.

Notes

For extra crisp skin, broil the chicken for 2-3 minutes at the end of baking, watching carefully to avoid burning.
