Blueberry Thyme Chicken

Blueberry Thyme Chicken is a savory and slightly sweet dish combining tender chicken breasts with fresh blueberries and fragrant thyme, perfect for a flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Season the chicken breasts with salt, pepper, and half of the thyme leaves.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Add blueberries, chicken broth, honey, and remaining thyme. Cook for 3-4 minutes, gently mashing some blueberries to create a sauce.
  5. Stir in butter until melted and sauce thickens slightly.
  6. Return chicken to the skillet, spoon sauce over the top, and cook for another 2 minutes to heat through.
  7. Serve immediately, garnished with extra thyme if desired.

Notes

For an extra burst of flavor, serve with a side of garlic mashed potatoes or roasted vegetables.
