  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 – 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • For streusel topping:
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter, cubed
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, salt, and baking powder.
  3. In a measuring cup, mix vegetable oil, egg, vanilla extract, and enough milk to make 1 cup of liquid total. Stir this into the dry ingredients just until combined.
  4. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. To make the streusel topping, mix sugar, flour, cinnamon, and butter together with a fork until crumbly.
  7. Sprinkle the streusel evenly over each muffin.
  8. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Let muffins cool for 5 minutes in the pan, then transfer to a wire rack.

Notes

For extra flavor, toss blueberries in a little flour before folding into batter to prevent sinking, and enjoy warm with butter or cream cheese.
